The Babbo Cookbook is Mario’s biggest yet, filled with recipes that have redefined contemporary Italian cooking. As a side note I recommend detaching the claws when killing the lobsters, and leaving them on the grill longer than the body, otherwise they won’t be cooked through. In all fairness, the recipes that a restaurant kitchen uses are often difficult to translate to ones that can be prepared at home – when a restaurant is cooking coobook large quantities over extremely high heat, it’s difficult to reduce the ingredients to typical home serving sizes that are then prepared on a stovetop.
To give you an idea of how crazy I am, I don’t have a pasta maker. Mario has been a more active racing fan these last few years, hosting prerace dinners at the track for the drivers. I actually bought it years ago and only started cooking from it fairly recently for these reasons.
I’ve had this book on my wish list for awhile. Some have fennel, some have celery coolbook, some use ham or lard, pancetta or olives. I also made the asparagus and ricotta ravioli last year for Easter using homemade ricotta sadly, no picture.
